Despite this grape variety is disseminated thrughout Italy, the place in which Barbera gives its best is Piedmont. It has a high level of acidity, which is sometimes a little excessive and can make it inelegant and harsh. But this acidity can be trasformed into smoothness by malo-lactic fermentation, which trasforms malic acid, which has a strong bitter taste into lactic acid, which is rounded and sweet. Traditionally Barbera was aged in large wooden barrels, but over the last ten years the use of barriques (225 litres) has spread: the result is a wine smoother and with a higher ageing potential, as the wood releases some of its own tannins. . COMBINATION: Hot hors d’oeuvres, pasta (“tajarin” with chicken livers), white meat (as chicken Cacciatore), roasted red meat, mature hard cheese or fatty and creamy cheese. Barbera vineyard is about 0,45 hectare wide; the annual production amounts to 1900 litres of Barbera Alba DOC, on average. Normally we bottle it during next year summer (2000 bottles, more or less).
CHARACTERISTICS - Colour:
ruby red when young with tendency to garnet red after ageing. Bouquet: winey, intens. Flavour:
dry with a good body, accented acidity and soft tannins.

Nebbiolo is one of the world’s finest vines and is grown almost exclusively in Piedmont, where it originated. Its name comes from the Italian word for mist, “nebbia”, owing to the fact that the Nebbiolo grape variety ripens rather late, when the hills are already shrouded in the first autumn mist. Nebbiolo is part of the family of Barolo since they both comes from the same vine but, unlike Barolo, it can be released for marketing even just one year after harvest. COMBINATION: Red and white meat dishes; excellent with fondue and semi-hard cheese seasoned with herbs. Nebbiolo vineyard is about 0,65 hectare wide; the annual production amounts to 3000 litres of Nebbiolo Alba DOC, on average. Normally we bottle our Nebbiolo in the summer, two years after the grape-harvest (3000 bottles, more or less).
CHARACTERISTICS - Colour: intense ruby red with a tendency to garnet red. It gets orange hues with ageing. Bouquet: fine, delicate with violet and rose scents. Flavour:
dry, velvety, medium body, medium tannic, reminding of berry fruits in
particular raspberries, and ment too. With ageing it gets scents of
spices and tobacco.

Sot-vos is a special wine, produced with Barbera d'Alba DOC, flavoured with cinchona, quassio and gentian; their active principles are extracted by maceration in a low temperature ambient, with final add of sugar, alcohol and aromatic spices (cardamom, bitter orange, tonca broad bean, mace). Wine flavoured with cinchona was born in Piedmont in the XX century as a digestive and medicinal beverage, but soon it spread thanks to its particular bitter-sweet taste. The colour is intense garnet red, and its alcohol content (by volume) is 16%. Ideal with sweet, in particular made with chocolate and coffee, Sot-vos is a meditation wine, to taste exactly in a low voice... Infact Sot-vos is a piedmont dialect expression meaning “in a low voice” and it’s also the title of a poetry: |
|
| Sot-vos
As brama nen, a se sbandiera nen, as disa pian sot-vos, (che gnun i sento): la gòj. (Barbafiore - Set-te lì, parluma un po', 1979) |
Sot-vos
You don’t shout it, you don’t show off it, you say it quietly, in a low voice ( as nobody coul hear): the delight. |
